Green Velvet Cupcakes with Peppermint Crisp Buttercream

    Ingredient

    • Cupcakes
       
    • flour
      2 ½ cups
    • sugar
      1 ½ cups
    • bicarb
      1 tsp
    • cocoa powder
      1 tbsp
    • salt
      1 tsp
    • eggs
      2
    • vegetable oil
      1 ½ cups
    • buttermilk
      1 cup
    • green food coloring
      2 tbsp
    • vanilla essence
      1 tsp
    • white vinegar
      1 tsp

    • Peppermint Crisp Buttercream:
       
    • Nestlé Peppermint Crisp® Dessert Topping with pieces
      2 tbsp
    • butter, softened
      200 g
    • icing sugar
      4 cups
    • cream
      2-5 tsp

    Method

    1. Cupcakes:
    2. Preheat the oven to 160°C. Fill a cupcake pan with liners of your choice.
    3. In a medium bowl, add the flour, sugar, bicarb, cocoa powder and salt. Whisk to combine.
    4. In the bowl of an electric mixer, combine the eggs, oil, buttermilk, food coloring, vanilla and vinegar.
    5. Beat this mixture until a smooth consistency forms.
    6. Sift the dry ingredients into the wet and mix until just combined.
    7. Divide mixture evenly into the liners. You can use a measuring cup to ensure even cupcakes.
    8. Bake for 18 minutes or until a skewer inserted comes out clean.
    9. Peppermint Crisp Buttercream:
    10. In a large bowl whip the butter together
    11. Slowly add 2 cups of icing sugar.
    12. Add the Nestlé Peppermint Crisp® Dessert Topping with pieces and continue mixing. Add in the remaining icing sugar and cream depending on what consistency you want the buttercream.
